{I like to say, with a sense of humor, that my origin is the Mediterranean. I have mixed heritage and experiences. Born in Paris, raised in Piraeus, I lived for ten years in Italy’s culinary capital, Bologna, where I came of age. I studied Economics, but I was won over by creation, cooking, and Corfu—the island with its unique history and five million olive trees. I’m passionate about seasonality, locality, ethical cooking, and products crafted with love. My ambition is to create flavors with unexpected ingredient combinations where each element elevates the other, making people enjoy themselves, whether in the restaurant or at home, around a table with wine, olive oil, love, and delicious dishes… creating moments and memories centered around food and cooking.}
